Hiding out….

So there’s a guy at my gym who comes almost every day in full hunting camouflage and I can’t help but wonder, who is he hiding from? I totally get the wearing camouflage while hunting thing, you don’t want the deer or whatever to see you. But who don’t you want see you at the gym? Is it me? Because it is not working. Though I do love when he wears the whole outfit plus the NRA hat. Hot.
Speaking of hiding. I feel like I have been living in a cave as of late. My Google reader is busting out. My email is piling up…big time. I would love to say that some crazy wonderful things were happening, but they are not. It’s just somehow my life got set on fast forward right now and I can’t ever seem to get the things I need to get done.
I originally was just making peanut butter cookies for the hubby. But I discovered that I didn’t have enough peanut butter (so odd, we are never out). So I ended up making more of a sugar cookie with a hint of peanut butter. My husband liked them all the same.
Today I went to Costco to buy more Jif. And you know what? Those (insert really bad swear word here) aren’t carrying Jif Peanut Butter anymore. Oh the horror. They are now carrying Skippy. THEN when I complain about it the woman says, they are all the same, just eat the Skippy. Oh. No. She. Didn’t. I went into great detail about what Jif was better. Sadly it fell on deaf ears. So I had to buy it full price at the store. Boo.
To add more peanut butter flavor to these I made a Nutter Flutter filling of basically just peanut butter and marshmallow. Made them extra yummy though. And to make things even more yummy I made a Peanut Butter Drinking Chocolate to go along with it.
I’m hoping to come out of hiding by the weekend…if not, I guess I will have to go buy some camouflage to wear.

Brown Sugar Peanut Butter Nutter Fluffer Sandwich Cookies

Brown Sugar Peanut Butter Cookies

1 cup cold unsalted butter, diced
¾  cup granulated sugar
1 ½  cups lightly packed dark brown sugar
2/3 cup peanut butter
2 eggs
1 vanilla bean, split, seeds removed, pod discarded
3 cups all-purpose flour
2 tsp baking soda
½ tsp salt

Preheat oven to 350F.
Cream butter and sugars in a mixer on high speed, scraping down the sides of the bowl often.
Beat for about 3 minutes, until light and fluffy. With the mixer on low, add the eggs and vanilla beans, then add the peanut butter and mix well.
Add the flour, baking soda, and salt and mix on low speed until all the ingredients are incorporated. Increase the speed to medium and mix just until the dough is smooth.
Using a small ice cream scoop(or a tablespoon) form the dough into ½ inch balls and place on greased cookie sheet. Flatten cookies with a fork. Bake just until golden brown, about 10 minutes. Let cookies cool about 5 minutes and transfer to a rack to cool completely.

Nutter Fluffer Filling

¾ cup marshmallow crème
¾ cup peanut butter
2 TBSP milk

Heat marshmallow crème over low heat in a small saucepan. Remove from heat and add peanut butter and milk. Whisk until fully incorporated. Let cool.
Pipe into center of cookie and place another cookie on top to form a sandwich.

Peanut Butter Drinking Chocolate

Hot Chocolate Base:
1 cup cream
¼ cup milk
2 TBSP corn syrup
1 pound dark chocolate (Valrhona is what was used)
1 vanilla bean, split, seeds rendered, pod discarded (or ½ tsp vanilla extract)

Peanut Butter Milk
1/3 cup smooth peanut butter (I of course used Jif!)
1 quart whole milk
1/3 cup granulated sugar

In a small saucepan, bring cream, milk, and corn syrup to a boil.
Once the mixture has boiled, chill it over an ice bath. Strain cream into a large bowl and then return the strained cream mixture to a saucepan and bring it to a boil again.
Pour the hot cream over chocolate in thirds, mixing well before adding more. Add the vanilla beans to the mixture and allow to cool.

For peanut butter milk:
In a medium saucepan, bring the milk to a boil with the sugar.  Remove off heat and whisk in peanut butter. Allow to cool.

To assemble and serve:
For one cup, steam 2 heaping TBSP of the chocolate base with 1 ½ cups peanut butter milk with an espresso machine, or heat them together in a small saucepan. Serve immediately.

    How dare they compare Skippy to Jif!?!?! Jif is the superior pb by far(the only PB as far as I’m concerned!)Anyway great looking cookies!

    The peanut butter cream looks so good.. and no powdered sugar either! I need to give that kind of filling a try. I’ve never had Jif before because we’ve always just eaten Kraft. Actually I don’t think I’ve seen it sold except for once at Walmart in a very tiny jar.

    Looks delicious! Though I think I will go with straight up milk to drink with these. Then I’ll have to make your Butterscotch Blondies (best thing EVER) or something similar and make the peanut butter drinking chocolate to go with THAT! I’m a wimp about peanut butter– love it, but there has to be something else to go with it.

    Oh my goodness someone who feels the same way I do about Jif. It tastes like true roasted peanuts. It’s the only peanut butter I use. Thanks for the recipe, I will try very soon.

    I’m so happy that you posted these two recipes. I’ve had this jar of marshmallow creme sitting around and I’ve been wondering what to do with it. This is the perfect excuse to break it out. And who doesn’t love chocolate and peanut butter? I can’t wait to try these recipes out.

    Talk about a crazy coincidence… I just bought some peanut butter and marshmallow creme yesterday to make peanut butter sandwich cookies this week! The recipe I have calls for a bit of cumin in the filling… the cookies end up tasting just like the girl scout kind, only softer. Yum!

    Oh my goodness. What an array of wonderful goodies. These cookies would’ve sounded great alone, but with a fluffer nutter filling, man, how delicious! I cannot wait to try these suckers out. And that pb drinking chocolate…amazing?! And by the way, Jif is soooo much better than Skippy. How could that silly woman not understand?

    Sometimes hiding is good! Instead of worrying about it, just tell yourself you are going to unplug and recuperate. It feels good to free yourself for a little while. And PB drinking chocolate!! That sounds insanely good!

    I just gained about 10 pounds reading your posts. Those sugar cookies look dense & moist… and with peanut butter filling? Yum. The peanut butter drinking chocolate looks impossibly rich. Wow. What a snack!!

    These cookies look wonderful. And although I prefer Skippy I can understand how you felt when Costco didn’t have Jif. My BF loves all things peanut butter so I will be making these for him soon.

    We fell victim to the Costco conspiracy quite a while ago. I tolerate the Skippy, but Jif is definitely my favorite.

    It’s such a pet peeve of mine when people tell me that different brands of food products taste the same! I agree that they don’t, but I LOVE peanut butter, so I’ll eat it under any name! 😀

    I have to say, your cookies look delicious! (even though I’m a Peter Pan girl and you used Jif LOL) I actually have been making my own peanut butter a lot lately. It’s fun and fast and it tastes great.

    Good to see the Fluffer Nutter still in vogue! Your camo story reminds me of a laugh some friends of mine had on the Rogue River in Oregon: Brand new fire-engine red drift boat comes down the river with two anglers in head-to-toe camo. My friend turns to his buddy: “Look, a shiny new boat with NO ONE in it. Imagine that!” The anglers were not amused.

    When my hubby and I were newlyweds, I was literally lectured about why Jif was far superior to Skippy. I was laughing so hard when reading your experience at Costco and telling the saleswoman about the differences between both brands. 😛
    (Since DH eats the majority of PB in our house, I decided not to fight him on this one. We’re a Jif family now!)

    Holy cow that looks so good! You know, after reading your post, I think I might try wearing camo to the gym! Any attempts to hide my clumsiness on just about every machine there works for me. Of course, as you said, I’d probably just stand out more.

    Wish I could say I just don’t need to go to the gym. But, if you keep posting these amazing, delicious treats, I’ll have to keep working out. 🙂

    Ironic. I went to make my standard peanut butter chocolate chip cookie recipe last night, and I didn’t have enough peanut butter either. We’re NEVER out of peanut butter. Then I remembered that hubber’s had been out of town for a a few weeks and I was existing on the stuff. Anyway, ended up making nestle toll house recipe. I DO NOT like. Too much butter. I can’t stand that buttery taste/greasy mark on my cookies.

    Adding PB to my shopping list, and making your cookies next!

    Oh, and does Mr. Camo wear a bluetooth? That would be ironic as well.

    I hate Skippy peanut butter. Really, anything that isn’t JIF just isn’t good.

    Oh wow, that pb drinking chocolate looks thick enough to float on 🙂 I rarely make pb cookies, I think because I really like them (and would actually eat them – all).

    That camo guy… maybe he could only afford to invest in one set of clothes so he went with the hunting-wear – because if he wore his Richard Simmons hot pink tank top hunting, he might have more than just scaring deer off to worry about – ha ha ha!

    All I have to say is, oh wow! Mmm…PB. I totally agree with you on the Jif thing. Skippy just doesn’t compare. My google reader is also busting at the seams, but my life hasn’t been pitched into fast forward. I’m just lazy these days.

    These are terrific! Mine only needed 8 minutes in the oven, you definitely want to take them out when they are still somewhat soft. I also added more fluff to the filling, I needed the whole jar to fill all the cookies, I had about 30 sandwiches. Mine were larger and didn’t look as cute as yours Pea, but thanks for a fabulous recipe.

    Oh dear. Two of my favourites have been combined…again. Ok. My arm has been willingly twisted and I’ll have to bake these, Today.
    To my fellow Peanut Butter lovers. I too was once a fan of normal Peanut Butter ( yes, it’s worthy of cap. locks). The name of my poison, Peter Pan with Honey. Then the shades drew open and I saw the light that is P.B Loco and then another named Peanut Butter & Co. And yet another ( albeit expensive ) light at the site of Spread the Restaurant. One hasn’t lived until they have tried a Dark chocolate infused Peanut Butter or one with Maple. The texture is amazing, it’s like nothing else on earth. I found myself in the corner of my kitchen with a spatula and an empty jar of Mighty Maple. I don’t know what happened but it was wonderful. 🙂
    @Eva. Marshmallow cream is simply marshmallows that are in a thicky, delicious melted form of their square cousins. If you can’t find a jar try melting some whole large ones over the stove with a bit of milk. It will be very sticky but if you mix it right away with the other ingredients then maybe the consistency will be alright in the long-run?

    i’ve had my eyes on these cookies for a while and got around to making them tonight. they are soooo good, thanks for posting. i was curious about the yield since it’s not listed but i cut the recipe in half and got 30 plus cookies. i’ll have to share them with friends and neighbors because i can’t have that many sitting around here… it’s not safe! thanks again!!!

    I’m so sad. When I print out recipes from blogs, I (of course) like to include a photo. I copy and paste the whole thing onto a MS Word page, so I can let a bunch of recipes pile up to print later. And none of the photos for this recipe will copy. Boo hoo!

    The cookies look great but hopefully you can find a grind your own peanut option. I am so lucky in that my market has a peanut grinder that allows me to grind at time of purchase , no sugar and its very inexpensive!
