Tarty goodness from Idaho…

I’m back from the land of potatoes…into the land of uncomfortably hot! Ugh, seriously, our region was not made for 94F weather. I would be loving some a/c right about now.
Luckily for me, while we were visiting Idaho, my mom made a Rhubarb-Mandrian Orange Crisp to take over to my aunt and uncle’s for dinner that night. I only brought my point and shoot camera so the photos aren’t that great but so be it.
It’s definitely a humble looking dessert but certainly tastes good. Vanilla ice cream is a must with this since rhubarb runs on the tart side.
That’s all I’ve got today…7 hours in the car with the dog sitting or leaning on me has worn me out. As you can see from below she too was more than happy to get out of the car.
No baking for awhile, I am seeing something frozen in the future…that’s if I can photograph it with it going to be almost 100F around these parts in the middle of the week.
Did you hear that? It’s the sound of me melting. 🙁

Rhubarab-Mandirian Orange Crisp

6 cups chopped fresh or frozen rhubarb
1-1/2 cups sugar
5 tablespoons quick-cooking tapioca
1 can (11 ounces) mandarin oranges, drained
1 cup packed brown sugar
1 cup quick-cooking oats
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter, cubed
Ice cream, optional
Directions:
In a large bowl, toss the rhubarb, sugar and tapioca; let stand for 15 minutes, stirring occasionally. Pour into a greased 13-in. x 9-in. baking pan. Top with the oranges.
In a large bowl, combine the brown sugar, oats, flour and salt. Cut in butter until mixture resembles coarse crumbs; sprinkle evenly over oranges.
Bake at 350° for 40 minutes or until top is golden brown. Serve with ice cream if desired. Yield: 12 servings.

    Looks yummy – being winter here in Australia I’m all for baked/warm dessert at the moment…however I know that feeling of it just being too hot to even look at the kitchen – particularly when out summers hit the 45 degree celcius mark!!

    Ah! Perfect I’ve been looking for something more than pie or cake to try. Thus far rhubarb has not been a winner in this house but this crisp looks promising. My boys already love the mandarin orange part!

    Those pictures make me want to go somewhere beautiful and rural.

    If it makes you feel any better, the mid-atlantic region has gone full force into summer this week too. And my lovely Washington, D.C. is about 150 percent humidity. Yum. Baking is kind of like blow drying your hair when its this gross out…pointless. I just wish I had an ice cream maker…

    Nothing quite like a happy dog rolling in the grass.
    I have been lucky this summer in that the weather has been mild, but this terrifies me. What if all the hot days are ganging up, getting ready to just melt the living daylight out of us after we have gotten soft and carefree under cover of clouds?
    Hopefully it passes soon for you. And if nothing else, it’s a great excuse to eat ice cream 🙂

    Together I’d say the melting is rather loud! Seattle was hot/ is hot, Portland is hotter!

    You’re a trooper to live through those temps with no A/C. I’d die without it! But with all our Southern humidity it’s a must.

    Sounds delish! I have never seen Rhubarb paired with anything else but strawberries. May have to give it a try.

    I hate this weather! I’m going to make no-bake cookies so I have something to post on my blog.

    I’m not sure that I like rhubarb, but this crisp really looks good. I wouldn’t think of putting rhubarb with mandarins, but it looks like it works!

    Love all things rhubarb…this looks sooooo good! Hope the heat lets up…it was hot enough when we were there and then got hotter. What the f is going on? Seattle is the cool, gray place, no? Hope it cools down ALOT for you soon. Bet some wicked good ice cream or sorbet will be created…can’t wait.
    Very sorry to have missed seeing you. Coming to CA anytime soon??

    I can’t tell which I like more,

    Pea, here, on the other hand, it’s rainy and cold – I like cold, but don’t like rainy. :S

    Every time you mention your mom I think of those homemade jams of hers… They must be delicious, just like this crisp!

    The papers are full of complaints about the weather here in GB being too cold and rainy. But I am happy as Larry.
    When I lived in Seattle, and it was over 100, I just went swimming in the lake all day. Seattle isn’t really geared up for hot weather.
    Your dog is so cute. Poor baby, having to wear a fur coat in such hot weather!

    When I heard of the recent hot weather up there, the first thing I thought of was “oh Peabody’s going to melt!”. Hopefully it will get cooler there.
